
Uzhunnuvada Recipe
Ingredients
1. Black gram (Uzhunnu Paripp) – 1 Cup (150gm)
2. Small Onion (Shallot) – 2Nos (Cut as small pieces)
3. Ginger – a small piece (mash it slightly)
4. Green Chilli – 3 Nos ( Slice as round in shape)
5. Pepper Powder – 1 Teaspoon
6. Curry leaves
7. Salt
8. Rice Flour – 1 Teaspoon
9. Oil – for frying
Method of Cooking
Soak the black gram in water for 2hrs minimum. Grind it using a mixer avoiding water if possible. If needed, add 2-3 teaspoons of water. Keep it aside for fermentation 6-8 hrs. (This is recommended to get crispy vadas.) After that add the ingredients from 2 to 8 to the black gram and mix it well. Heat the oil in a frying pan, apply a little cold water in your hands, make balls and press slightly using palms to get a firm flat round shape. Using the finger make a hole in the middle. Place it in the oil and deeply fry. Ready to serve.
